This Sushi Lead Cook must be experienced in Japanese Cuisine. Understanding of Japanese cooking methods as well as ingredients and cooking guidelines.
Key Qualifications

Basic sushi preparation and recipe knowledge required

1-2 years of cooking experience preferred

Advanced understanding of professional cooking and knife handling skills

Must understand the use of various kitchen equipment including steamer, ovens, fryer, grill, steam kettle, meat slicer, blender, mixer, chopper, food processor, knives, convection oven, etc.

Experience as a cook in high volume dining establishment preferred

Be able to speak clearly and listen attentively to staff, peers, supervisors and guests

Must have approved Food Handler Card
